Gleba: Portuguese Artisan Bread Moves to Cloud with SAP

The Lisbon bakery, a pioneer in sourdough bread, has digitized its management with the help of SAP and Inetum.

100% local grains, integrated milling, slow 24-hour fermentation... Gleba embodies the revival of artisanal bread in Portugal. Since its creation in 2016 in the Alcântara district of Lisbon, the company has expanded to more than twenty points of sale. But this rapid growth has brought with it a challenge: back-office processes have become too complex, manual, and dispersed. To address this, the SME has made a seemingly contradictory decision: to focus on digital transformation.

 

A Cloud Strategy Built for Growth

“Technology, whether hardware or software, is a key factor in our strategy”, explained Diogo Amorim, CEO of Gleba. The executive identifies concrete benefits: reduced breakage, fewer stockouts, and improved performance indicators, which are crucial in the bakery sector.

Already using an SAP solution for SMEs, Gleba wanted to remain within this ecosystem while acquiring a more robust tool. “We plan to grow, we plan to expand internationally, and so we need a solution that is available now and, above all, enables us to prepare for the future”, explained Diogo Amorim. The company chose SAP's S/4HANA Cloud ERP.

To carry out this migration, Gleba turned to Inetum, which was involved in every stage of the project: defining requirements, implementation, and training teams. The approach adopted emphasizes collaborative work and aims to facilitate adoption by end users. An additional advantage is the absence of heavy IT legacy to replicate. “It's the best starting point”, noted Pedro Gomes Santos, CEO of Inetum Portugal.

Concrete Results and AI in our Sights

The benefits of this transformation are already visible. Gleba now has real-time visibility of stock levels in each of its stores, enabling dynamic management of production and distribution. This reduces waste and the risk of stock shortages. Optimizing purchasing and inventory processes also improves operational efficiency.

But for Diogo Amorim, this is just the beginning: “There are many things we want to do, particularly with artificial intelligence, such as planning production, improving sales forecasts, and reducing waste. We consider Inetum to be a truly strategic partner for all these projects.”

All this with two objectives for Gleba over the next 10 years: to consolidate local implementation and expand into international markets. What better way to conquer the local and global markets than with traditional craftsmanship combined with cutting-edge digital tools!
